6 hard-boiled eggs
2 cups of spinach leaves
2 tablespoons of butter
1 tomato (for garnish)

Cut the hard-boiled eggs in half lengthwise
Remove the yolks
Cook the spinach in a little water
Drain well
Finely chop and lightly fry the spinach in melted butter for a few minutes
Add the cooked yolks that have been mashed
Mix well
Stuff the whites with this mixture
Garnish each egg half with a tomato slice
For the salad, cut the tomatoes into wedges
Place in the center of a platter
Mix the seasonings and pour over the tomatoes
Arrange the stuffed eggs around, serving 6.
