1 cup cooked pine nuts (200g)
1 onion, coarsely chopped
1/2 cup cooked rice
Salt and black pepper to taste
2 tablespoons chopped parsley
Oil for frying

Process the pine nuts with the onion and rice in a processor until you get a smooth mixture
Season to taste, add the parsley and mix well
Shape into small balls using 1 tablespoon of the mixture each
Heat about 3 cm of oil
Fry a few balls at a time, reduce heat and fry until golden
Make about 20 balls
