4 to 6 hard-boiled eggs

After the eggs are cooked, peel and cut them lengthwise with care not to break the whites
Remove the yolks and strain them through a sieve
Combine the mayonnaise, shallot, grated cheese, and taste to adjust seasoning as needed
Add salt and black pepper if necessary
Use mustard or English sauce if preferred
Fill half of the egg whites with the yolk mixture, arranging them carefully on a flat plate that will go in the oven
Prepare a recipe for white sauce and pour it over the filled eggs
Put it in the oven to brown.
