Preheat the oven to 340°F
Boil 1 pound of spinach for a minute in boiling water with salt
Let it dry, cool down and chop
Melt 3 tablespoons (2 1/4 teaspoons) of butter in a baking dish, add the spinach and stir to coat the butter evenly
Make 8 nests with the spinach and break 1 egg into the center of each one
Season with salt, pepper, grated Parmesan cheese and breadcrumbs
Put it in the oven for 15 to 20 minutes, or until the eggs are cooked, and serve.
