Step 1
In a saucepan, heat the milk with cinnamon and lemon zest
Beat the whites until frothy
Add half the sugar and beat again
Shape into balls and cook in the milk
Combine yolks with condensed milk, cornstarch, vanilla extract, and remaining sugar
Mix well
Combine with the milk mixture, mix well, and simmer
Step 2
Cook over heat until a smooth cream forms
Cook sugar and vinegar until caramel forms
Remove some of the caramel and let it drizzle into strands, forming a nest
To serve, place the cream in bowls, top with whites, and finish with caramel.
