2 tablespoons cornstarch
1 pinch salt
2 tablespoons wheat flour
2 egg yolks
2 teaspoons vanilla extract
3 egg whites

1/2 cup orange gelato
2 tablespoons Grand Marnier, Curaçao or Cointreau

Combine milk, cornstarch, and salt in a pan
Bring to a boil, then add wheat flour dissolved in cold milk, stirring constantly for 3 minutes
Remove from heat and whisk in egg yolks and vanilla extract
Let cool, then fold in whipped egg whites
Pour into a buttered and floured 16 cm diameter mold
Adjust to freeze according to instructions on the side
To serve, thaw and bake in a hot oven (200°C) for 1 hour or until golden brown
Prepare the sauce: melt gelato in a pan, stirring until smooth
Remove from heat, whisk in Grand Marnier, Curaçao, or Cointreau
Let cool, then freeze separately
To serve, thaw and pour warm over the soufflé
For freezing: cover with aluminum foil, seal with plastic wrap
Label with name and date of preparation, and store in the freezer
To serve: remove from freezer, let stand at room temperature for 30 minutes
Remove wrapping and bake in a hot oven (200°C) for 1 hour or until puffed and golden
Serve with sauce.
