1 cup of cooked beet

12 leaves of arugula
2 stalks of sweet lovage, finely chopped
1 red apple, peeled and cut into cubes

Mix the beet with the other ingredients, except for the arugula leaves
Place 1 tablespoon of the mixture on each arugula leaf
and fold to form a package
Serve with sliced tomato and toasted bread.
