1/3 cup of chopped tomato, peeled and seeded
2 tablespoons of olive oil
1 tablespoon of chopped dill or thyme

Preheat the oven to moderate heat (180°C)
Season the fish fillets with salt and pepper
Mix well the remaining ingredients and season with salt
Place each fillet on a square of aluminum foil, about 24 cm x 30 cm
Distribute the prepared mixture over the fillets
Fold the paper to form a package, without pressing the contents
Bake in the oven for about 20 minutes, or until the fish is cooked
Serve the fish packages as desired.
