Season the shrimp with salt and lime juice. Reserve
Heat the olive oil in a pan over medium heat until softened
Add the onion and cook for 1 minute
Add the tomato, jalapeño, and cook for an additional minute
Add the shrimp and cook for 3 minutes, stirring occasionally
Then add the parsley and mix well
Remove from heat and let cool

Assemble small rectangles on two sheets of phyllo dough, cutting to size if necessary
Fold the phyllo into a neat package, then transfer it to a baking dish
Bake until golden brown
