Combine the water and lime juice in a microwave-safe container and heat on high for five minutes
Add the spinach, cover, and microwave on high for eight minutes
Drain and cover with water

In a microwave-safe container, combine the linguiça and onion
Cook on high for two minutes, stirring halfway through
Add the red bell pepper, mozzarella cheese, and pancake mix
Mix well. Reserve

Drain the spinach leaves, pat dry, and cut in half
Remove the central part
Place 1 1/2 tablespoons of linguiça filling on each leaf, fold the sides, and roll into a pacotinho

Arrange the rolls on a microwave-safe plate lined with parchment paper, brush with oil, and microwave on high for two minutes
Serve immediately.
