Mash the garlic well and combine with salt and thyme
Make some incisions in the fish and apply the salt mixture
Place the fish on the oven grill, with a baking dish underneath
Pour the wine and water mixture over the fish
Bake in a moderate oven (180°C) for 1 hour
Brush the fish with the sauce from the baking dish occasionally
Serve the fish with the sauce that forms in the baking dish
