Peel the pumpkin and cut it into 0.5 cm wide and 5 cm long strips
Season with salt and pepper
Heat a medium skillet with the butter
When melted, add the pumpkin sticks and cook, stirring occasionally, for 8 minutes or until the pumpkin is cooked but still crispy
Serve warm and sprinkle with parsley
