Fold the prosciutto slices in half
Wrap each palmito in a folded prosciutto slice and secure with a toothpick
Coat the wrapped palmitos in wheat flour, beaten eggs, and cake flour
Arrange the wrapped palmitos in a refrigerator, dust with cake flour, and refrigerate for two hours
Fry in hot oil until golden brown
Drain on paper towels.
