Boil the sweet potatoes in salted water
Mash the sweet potatoes and add milk
Let it cool down, then refrigerate
Add all-purpose flour and mix with a wooden spoon
Add whole eggs one by one, still mixing
Add egg whites and heavy cream without beating, and mix well again
Grease the pan well
Heat the pan
When hot, add 3/4 tablespoon of batter to the pan
Fry quickly on both sides
You can fry 5 to 7 at a time
Serve for 4 to 6 people
This is an excellent accompaniment to poultry and meats.
