Soak the sweet potatoes in cold water for 1 to 2 hours or overnight
Then, grate them with a fine grater and squeeze well to remove excess liquid
Peel and grate the onion and mix it with the sweet potato mixture, along with the egg, seasonings, and baking soda
Mix well
Melt butter in a large frying pan and add one tablespoon of the sweet potato mixture for each pancake
They should not be too thick
Cook until the bottom is golden brown, flip, and cook the other side
Add more butter to the pan as needed, using up all the batter
Serve 4 portions.
