1 large head of cauliflower
1/2 cup crumbled breadcrumbs lightly fried in 2 tablespoons butter or margarine
1/2 cup grated Parmesan cheese
2 egg yolks slightly beaten
2 tablespoons all-purpose flour
2 cups sour cream
2 whites
1 cup cooked prosciutto, cut into 1 cm cubes
1 large head of cauliflower

2 cups sour cream

1 cup cooked prosciutto, cut into 1 cm cubes
Butter a glass baking dish and set aside
Wash the cauliflower, remove the stalks and leaves, and separate it into florets
Cook the cauliflower in water and salt until slightly tender but still firm
Mix together the breadcrumbs passed through butter or margarine with Parmesan cheese and reserve
In a bowl, mix together the egg yolks with flour and whisk well
Add the sour cream and mix well
Beat the whites into snow and add them to the egg yolk mixture, whisking carefully, and reserve
Drain the cauliflower and arrange half of the florets in the baking dish
Sprinkle with prosciutto cubes and cover with half of the meringue mixture
Add another layer of cauliflower and pour the remaining meringue mixture over it
Dust with breadcrumb mix and Parmesan cheese and bake at moderate heat (170°) until golden brown
Serve 6-8 portions.
