1/2 cup of sugar
1/3 cup of wheat flour
1/4 teaspoon of ground cinnamon
1/8 teaspoon of ground nutmeg
1 pinch of salt
1/4 cup of butter or margarine
2 cups of peeled and chopped mangoes
2 tablespoons of orange juice
'8 golden pancakes from one side'
1/2 cup of sugar
1/3 cup of wheat flour
1/4 teaspoon of ground cinnamon
1/8 teaspoon of ground nutmeg
1 pinch of salt
1/4 cup of butter or margarine
2 cups of peeled and chopped mangoes
2 tablespoons of orange juice
Mold the 8 pancakes and reserve them
In a bowl, mix together sugar, wheat flour, ground cinnamon, and ground nutmeg
Add salt and butter or margarine to obtain a crumbly texture
Reserve it
This mixture will be used to cover the pancakes and as a filling
In another bowl, prepare the filling: mix chopped mangoes with orange juice and add 1/2 cup of the previously prepared topping mixture
Then, place 1/4 cup of the filling onto each pancake that was not golden on one side
Fold both sides of each pancake in half to cover the filling
In a refrigerated form, place the pancakes with the folded side facing down
Sprinkle the remaining topping over it
Bake in a moderate oven (170°C) for about 35 minutes, or until golden brown
Serve warm with ice cream, if desired
