Dough
2 eggs
2 yolks
2 tablespoons of unsalted butter, at room temperature
1 tablespoon of brandy
1 1/2 cups of milk
1 cup of all-purpose flour
Filling
4 or 5 large strawberries, hulled and sliced into thick pieces
3 tablespoons of rosewater gelato
rind of 1 lime
1 tablespoon of sugar
Topping:
rind of 1 orange
rind of 1 lime
juice from the orange and lime
3 tablespoons of rosewater gelato
3 tablespoons of sugar
1/2 cup of water
Dough

Combine all pancake dough ingredients in a blender
Blend well
Refrigerate for about 15 minutes
Fry 12 large pancakes
For the filling, cook the strawberries in enough water to cover them, until they're tender but not mushy
Drain and mix with rosewater gelato, lime rind, and sugar
Stack a pancake on top of another, with filling between each one, and wrap in aluminum foil
Refrigerate
Combine the topping ingredients in a container that can be sealed tightly
Freeze
To serve, thaw the pancakes and topping
Place the pancake tower on a round refractory plate and put it in a moderate oven to warm up
In a saucepan, cook the topping until it's thick like syrup
Pour over the warm pancakes.
