Beat the pineapple with the eggs until a white mixture forms
Heat the heavy cream until boiling, pour over the eggs, add vanilla and mix well
Soak the biscuits in that cream until they absorb well
Line an 11.5 x 28.5 cm English cake pan with parchment paper
Layer a bed of biscuits in the pan and cover with a bit of the cream
Top with a little pineapple and alternate layers with more biscuits, cream, and pineapple
Cover with parchment paper and chill for one day to the next
Unmold and, if desired, serve with whipped cream
