Beat the butter and sugar until smooth
Add the vanilla and beat well
Add the eggs one at a time, beating well after each addition
Combine the flour and mix until just combined
Then add the coconut and mix everything together carefully
Pour the mixture into a 25 cm diameter hole in the center of a round cake pan
Bake in a moderate oven (170°C) for 1 hour and 20 minutes, or until cooked.
