3/4 cup of pancake mix (75 g)

In a medium pan, sauté in 1/4 cup of olive oil the onion, red pepper flakes, cilantro, and tomato over high heat until the tomato starts to soften (about 4 minutes)
Remove from heat, add the Siri meat, breadcrumbs, salt, paprika, and egg
Mix well
With this mixture, shape 16 small patties and coat them with the palms of your hands, forming crepes about 1 cm thick
In a plate, coat each crepe on both sides with pancake mix
Grease a non-stick skillet with a little remaining olive oil and fry the crepes one by one over low heat for about 5 minutes per side (add more oil as needed)
Serve warm
