Remove any excess fat from the chicken
Heat the olive oil in a non-stick skillet and brown the chicken
Use high heat to cook the chicken until it's lightly pink inside
Remove from heat and season with salt and black pepper
Drain the excess fat from the skillet
Add the white wine and let it simmer
Add the mustard, chicken, and thyme
Stir in the heavy cream
Serve warm, garnished with fresh herbs.
