Mix the sour cream, ricota, flour, lime zest, sugar, and eggs until very well combined
Grease a small non-stick skillet with oil and cook the pancakes slowly over medium heat
Use about 1 tablespoon of batter per pancake and flip carefully once
Serve with honey, sugar, and cinnamon or with melted ice cream.
