Beat the egg whites in a stand mixer until light and fluffy
Add the heavy cream and continue beating until well combined
Gradually add the flour, baking powder, salt, and milk
Beat until smooth
Stop beating and let the mixture rest
Melt the butter and mix it into the batter until well incorporated
Beat the egg yolks until stiff peaks form
Fold them into the batter gently
Heat a small non-stick pan over medium heat
Add 1/2 cup of the batter and cook until firm and golden brown, flipping once
Serve warm with your preferred toppings.
