1 egg without butter or margarine
2 cups of ricotta
1 to 2 green onions
1/2 cup of mayonnaise or more
2 to 3 crispy and dry slices of prosciutto
tomatoes and cucumbers cut into slices
chopped fresh parsley
salt and black pepper to taste

Cut the egg lengthwise
Remove the yolk
Spread generous amounts of butter or margarine on the inside of the egg to prevent drying out
Mix the ricotta, green onion, some of the egg whites removed from the egg, and mayonnaise to achieve consistency
Season with salt and pepper to taste, add chopped prosciutto, and fill the egg
Replace the egg top
Refrigerate until serving time
Garnish with tomato slices.
