Mix together sugar and cinnamon to dust
In a bowl, dissolve the yeast in sugar and salt
Whisk together eggs, milk, butter, and gradually add flour
Knead well until homogeneous
Let it rest for 20 minutes
Use a rolling pin to roll out the dough, spread banana slices, and roll up like a roulade, pressing sides tightly
Place in a large pie dish greased with butter
Let it rise to double its volume, brush with egg, and bake at 200°C until golden brown
Let it cool down, demould, and dust with cinnamon and sugar.
