In a bowl, dissolve the yeast in sugar and salt
Mix the eggs, milk, and butter, gradually adding the flour
Work the dough well until it becomes homogeneous
Let it rest for 20 minutes
Roll out the dough with a rolling pin, spread the bananas, and roll up like a roulade, pressing the sides well
Place in a large, greased pound cake pan
Preheat the oven to 400°F (200°C)
Let the cake rest until it has doubled in volume
Brush with egg and bake until golden
Let cool, unmold, and dust with a mixture of cinnamon and sugar.
