In a bowl, combine the flour and salt
Add the active dry yeast
Mix in the cold butter pieces well
Add the grated cheese and chopped onion
Knead quickly
Shape into 2 logs of about 3.5cm diameter and 15cm long
Wrap each log tightly in plastic wrap and refrigerate for at least a day
Dust a work surface with flour, open each log, and cut into rounds with a 5cm cookie cutter
Place the biscuit rounds onto a baking sheet lined with parchment paper, leaving some space between them
Bake in a moderate oven (180°C) preheated for about 15 minutes or until golden brown, then remove from the oven and let cool on a wire rack
Yield: approximately 80 biscuits.
