4 hard-boiled eggs, diced
1/3 cup of stuffed green olives, pitted and sliced

2 tablespoons of mustard

10 pancakes (see basic recipe)
120g of fresh ricotta or Minas cheese
green and red bell pepper strips

Prepare the filling: mix the ham, green peppers, pickles, 1/4 cup of mayonnaise, and reserve
In another bowl, mix the eggs, olives, scallion greens, mustard, to taste, and the remaining mayonnaise. Reserve
Spread the filling over 5 pancakes and top with the other 5
Top each sandwich with a layer of ricotta or Minas cheese (mix with a little milk to make creamy and spreadable)
Cut each pancake sandwich into 6 triangles
Garnish with green and red bell pepper strips
Arrange on a platter and refrigerate for later
Serve 12 stuffed triangles.
