4 large sweet potatoes

1 teaspoon of salt
4 teaspoons of sugar
2 fresh yeast tablets for bread
1 cup (stick) of lukewarm milk
2 egg yolks for brushing

Boil the sweet potatoes until they are cooked, but still firm
Drain and let cool
Pass through a ricer, then add the butter and let it cool
Gradually add the all-purpose flour and mix well
Add the beaten eggs, salt, and sugar
Dissolve the yeast in milk and combine with the dough
Mix by hand and cover with a clean cloth
Let rise until doubled in volume
Shape into medium-sized balls and place in a floured baking sheet
Brush with egg yolk and let rest for an additional 15 minutes
Bake in a medium preheated oven until golden brown.
