Crust
4 1/2 cups of wheat flour
2 1/3 cups of unsalted butter, softened
2 cups of milk
1 cup of honey
2 tablespoons of unsweetened cocoa powder
1 teaspoon of baking soda
1/2 teaspoon of ground cinnamon
4 large eggs
Topping
500 grams of chocolate chips for topping

Crust

Heat the unsalted butter and milk to a boil, then reduce heat and simmer for 20 minutes or until thickened
Let cool
In a bowl, whip egg whites until stiff and set aside
Melt chocolate and mix with flour and spices
Add eggs and honey, mixing gently
Fold in whipped egg whites and mix delicately
Preheat oven to medium temperature
Grease pie rings with butter and dust with wheat flour
Place rings on a baking sheet and fill each with 2 tablespoons of the mixture
Bake for 20 minutes or until edges start to set
Let cool
Topping
Melt chocolate chips in a double boiler
Mix well
Remove from heat, but do not remove from double boiler
Dip each peach pie ring into the topping and let excess drip off
Place on parchment paper to set before serving.
