In a mixing bowl, combine the two types of flour and make a hole in the center
Add the butter, yeast, and water, and mix well with a wooden spoon
Transfer to a lightly floured surface and knead until smooth and pliable
Form into a ball, place in a bowl, and cover with plastic wrap
Let rest for 1 hour
Divide the dough in half and roll out each half into a rectangle approximately 25 x 40 cm
Cover with goat cheese and roll each rectangle like a croissant
Place the two croissants side by side and cross them like a rope
Arrange on the baking sheet, cover, and let rest for 30 minutes
Preheat oven to high temperature
Brush the pie with the egg mixed with milk and dust with sesame seeds
Bake for 50 minutes or until the pie grows and is golden brown on top
Remove from oven and let cool.
