1 3/4 cups all-purpose flour
2 spoons active dry yeast
1/4 spoon baking soda
1/3 cup unsalted butter or margarine, softened
2/3 cup granulated sugar
2 large eggs, well beaten
1 cup ripe mashed bananas

Preheat the oven
Mix flour with yeast and baking soda, set aside
Beat the butter or margarine until creamy
Add eggs and beat well
Alternate adding the flour mixture and banana, starting and ending with flour, mixing very well
Pour into a well-greased English muffin tin and bake for 1 hour and 10 minutes, or until the cake comes loose from the sides of the tin
Let cool in the same tin for 10 minutes
Unmold and let cool before cutting
