Mix warm water with yeast in a bowl
Heat milk, sugar, butter or margarine, and salt until lukewarm
Melt the butter almost completely
Add yeast and egg to the mixture
Add 1 1/4 cups of all-purpose flour
Mix at low speed for about 1 minute, scraping the sides of the bowl with a spatula
Mix at high speed for another 3 minutes
Add the remaining flour and knead by hand until you achieve a soft dough
Form into a ball
Place in a greased bowl, turn once to grease all surfaces, and cover
Let it rest in a protected place until it has doubled in volume, about 1 hour or so
Punch down and place on a floured surface
Cover and let it rest for another 10 minutes
Form into small rolls of various shapes (coiled, twisted, etc.), cover, and let it rest in a protected place until it has doubled in volume again, about 30 to 45 minutes
Brush with egg and place in greased baking dishes
Bake in a moderate oven (170°C) for 10 to 12 minutes
Serve warm
For freezing: let it cool down
Wrap in aluminum foil and freeze
For thawing: wrap in aluminum foil and bake in a hot oven (220°C) for about 15 minutes.
