    Cut in half and remove the pits from 9 fresh peaches. In a blender or food processor, blend 1 cup of ricotta with 3/4 cup of lemon sorbet and 1 tablespoon of grated lime zest. In 6 layers, place 3 peach halves with 1/2 cup of ricotta mixture. Refrigerate for only 20 minutes, no more. Toast 12 almonds, chop, and sprinkle over the layers. Serve in 6 portions.
