6 large egg yolks
1 cup of sugar
1/2 cup of water
1/2 cup of melted dark chocolate
zest of 2 oranges
2 cups of heavy cream, or substitute with half-and-half or long-life cream
1/3 cup of Curaçao, Cointreau, or Grand Marnier liqueur

Beat the egg yolks until they're light and fluffy
Pour in the sugar, water, dark chocolate, and orange zest into a saucepan
Heat the mixture over low heat, stirring constantly until it starts to simmer and the sugar and chocolate dissolve
Let it simmer for 3 minutes before slowly pouring it over the egg yolks, whisking continuously until it cools completely
If using heavy cream, whisk gently (the others don't need whisking)
Gradually add the dark chocolate mixture to the whipped cream, stirring carefully
Add the liqueur and mix well
Pour into a serving dish or mold lined with parchment paper or aluminum foil
Refrigerate until firm
Serve in 4-6 portions.
