Prepare a broth with the hortelia and water, and bring to a boil for 5 minutes
Remove from heat
Add the chopped hortelia leaves
Cover and let it rest for 1 hour
Strain through a fine-mesh sieve or cheesecloth into a small bowl
Pour the broth slowly over the whipped egg whites, beating constantly
Add green food coloring to taste, if desired
Fold in the whipped heavy cream delicately
Portion into individual serving dishes and refrigerate until firm
Serve chilled
