1 cup of fresh ricotta cheese passed through a sieve
1/2 cup of heavy cream
2 tablespoons of vinegar
2 tablespoons of oregano
to taste

Mix all the ingredients well and serve with toasted cheese crackers and prosciutto (see recipe)
Let it sit for 30 minutes.
