To make the filling: melt the butter or margarine, add the wheat flour and mix well
Add the milk gradually, stirring constantly
Cook until thickened
Add the ham, onion, salt, and pepper
Mix well and reserve
To make the dough: sift together the flour, salt, and baking powder
Add the buttermilk in small pieces and use 2 knives to cut the mixture into a crumbly texture, adding enough water to form a dough
Do not overwork the dough
Roll out the dough on a floured surface to a thickness of 1/2 cm
Cut into circles of 8 cm in diameter
Place a small amount of filling in the center of each circle and fold, pressing the edges together tightly
Dip the tops in an egg mixture mixed with coffee and make a cut on the surface of each one
Place in an ungreased baking dish and bake in a hot oven (400°F), preheated, for 15 minutes or until the pastries are puffed and golden
Serve warm.
