2 cups of wheat flour
2 tablespoons of butter
2 tablespoons of olive oil
1/2 cup of water
Stuffing: 500g of codfish in pieces
1/2 cup of water
4 cloves
1/3 cup of cooked rice
2 eggs
4 tablespoons of grated Parmesan cheese
2 cups of wheat flour
2 tablespoons of butter
2 tablespoons of olive oil
1/2 cup of water
Stuffing: 500g of codfish in pieces
1/2 cup of water
4 cloves
1/3 cup of cooked rice
2 eggs
4 tablespoons of grated Parmesan cheese
Place the flour in a bowl and make a depression in the middle
Add the butter, olive oil, and water
Mix well, allowing the flour to fall slowly onto the liquids in the center
Mix everything together until a smooth dough forms
Cover and let it rest while preparing the filling
For the filling: Cook the codfish in water with the cloves until tender
Drain well and mash with a fork
Place in a pan and add the cooked rice
Cook, stirring constantly, until the liquid evaporates
Add the eggs and grated cheese, stirring constantly until the egg cooks
Pour into a refrigerator-safe mold and let it cool
Open the pastry by making thin slits and cut out circles with a 8.5cm diameter cookie cutter
Fill each circle with a little codfish mixture, close well, pressing gently with a fork, and fry in hot olive oil
Make about 50 mini pastries.
