1.25 kg of pork loin
4 eggs
1.25 kg of ground pork
200 g of fresh bacon, ground
300 g of fresh bacon, cubed
2 finely chopped onions
4-6 crushed garlic cloves
1 tablespoon of thyme
1 3/4 teaspoons of salt
1 3/4 teaspoons of black pepper
1/2 cup of brandy
1/2 cup of wheat flour

Grind the pork loin finely (or add it gradually to a blender), mix with eggs and beat well
Mix the ground pork, ground bacon, pork loin, and cubed bacon well
Add the onion, garlic, seasonings, brandy, and wheat flour
Line two large loaf pans or one smaller one with slices of salted pork bacon
Place the mixture and let it cook in a water bath, at warm water
Bake in a moderate oven (170°C) for 2-2.5 hours in a large pan or 1.5 hours in smaller ones
Let it cool for about 15 minutes before placing weights during cooling
Serve 10-12 portions.
