1 1/4 cups grated cheddar cheese
2/3 cup crumbled gorgonzola cheese
1 clove garlic
2 tablespoons unsalted butter
1/2 cup finely chopped onion
3 tablespoons Worcestershire sauce
2 tablespoons mustard
Salt and pepper to taste
3/4 cup water

Place the cheeses, garlic, butter, onion, Worcestershire sauce, mustard, salt, and pepper in a food processor
Process at low speed until well combined
Add the water gradually and increase the speed of the processor
Continue processing until the mixture is smooth and creamy
Refrigerate, covered with plastic wrap, for at least 3 hours.
