Mash the gorgonzola cheese and strain the ricotta through a sieve
Cut the tomato into small cubes, remove the skin and seeds
In a bowl, combine the gorgonzola, ricotta, mayonnaise, tomato, and chopped parsley
Mix well to obtain a paste
Serve immediately or refrigerate.
