In a large bowl, season the meat with salt, garlic, and parsley
In a large skillet, heat 4 tablespoons of olive oil over high heat
Fry small batches of the pork, transferring them to a plate as they cook
Once all the pork is fried, return it to the skillet and add the potatoes, green beans, and remaining olive oil
Stir well
Add the hot water, stirring to scrape the bottom of the skillet with a wooden spoon
Add the orange zest strips, reduce heat, and simmer until the potatoes and green beans are tender but still crispy
Remove from heat and serve
