The night before, combine the ingredients in a bowl
Marinate the duck and let it sit in the refrigerator

In high heat, melt the butter and add the onion, cumin, scallion, tomato, and duck
Stir occasionally for 30 minutes or until golden brown

Add half of the water and cook, stirring occasionally, until the meat is tender

Add the remaining water and uncooked rice
