8 chicken thighs or 8 pieces of boneless, skinless chicken breast
Salt and pepper to taste
1/2 cup (3 tablespoons) melted butter or margarine
1 1/2 cups ketchup-style hot sauce
1/3 cup water
2 medium onions, cut into rings
1/2 cup raisins
6 potatoes, peeled, seeded, and cut into slices

1 Preheat the oven to 350°F (180°C)
Season the chicken pieces with salt and pepper
Brush with melted butter or margarine and place in a baking dish or roasting pan for about 15 minutes
2 In a blender, combine ketchup-style hot sauce, water, onion rings, raisins, and mashed potatoes
Blend well and spoon over the chicken
3 Cover with aluminum foil and bake for an additional 50 minutes
Remove the foil and let it brown for another 30 minutes or until golden
