Prepare the filling: Place the butter and onion in a 20cm diameter refrigerator-safe container
Heat it in the microwave at high power for 2 minutes, or until the onion is soft
Add the grated cheese, salt, pepper sauce, and spinach
Mix well
Distribute the filling over the fish fillets
Roll each fillet lengthwise
Place the rolled fish alongside the container's edges. Reserve
In a small refrigerator-safe container, place the olive oil and garlic
Heat it in the microwave at medium power for 1 minute
Brush the rolled fish with the garlic-oil mixture and temper with lemon juice
Sprinkle with sweet paprika
Cover with plastic wrap, leaving a small opening, and heat in the microwave at medium power for 6-9 minutes
Let it rest for 3 minutes
Remove from the oven and serve with lime wedges
Serve 6 portions.
