Season the fish with salt, paprika, lemon juice, and thyme
Set aside
Let it sit
Cook the onion and butter in a pan over medium heat for 10 minutes with the lid on
Add the fish with lemon juice and water
Cover the pan and cook for 15 minutes
Flip the fish fillets once while they're cooking, being careful not to break them apart
Serve with mashed potatoes
Serves 4-6 people
Note: to give the mashed potatoes a reddish hue, season with 1 tablespoon of tomato paste.
