Fling each sardine with lemon juice and coat in flour
Fry the sardines in hot vegetable oil, a few at a time, for about 2 minutes
Drain on paper towels
While that's happening, combine white wine, vinegar, water, parsley, oregano, mustard, and olive oil in a saucepan
Season with salt and black pepper to taste
Bring to a simmer
Reduce heat and cook slowly for 8 minutes
Add the sardines, increase heat, and bring to a simmer again
Remove from heat and let cool
In a deep glass container, arrange the sardines
Pour the sauce over them and refrigerate
Serve chilled
These marinated sardines can be stored in the refrigerator for a few days
Serve 8-10 people.
