Season the fillets with two soup spoons of lemon juice and salt
Pickle them in flour and reserve
In a large frying pan, melt the butter over high heat until it browns
Add the fillets, reduce the heat, and cover
Cook for 2 minutes
With a skimmer, remove the fillets and reserve
In the same frying pan, add sugar and increase the heat, stirring until a caramel forms
Add the remaining lemon juice, water, and grapes
Cook, stirring as it starts to simmer
Add the fillets again, cover the frying pan, and cook for 2 minutes or until, when pierced with a fork, the fish separates into flakes
Serve immediately.
